Have you ever had Zucchini Bread? If not – STOP EVERYTHING – Print out this recipe and make it

Zucchini Bread is pretty much the BEST stuff around – there is 1 Zucchini in EACH loaf — so it is “healthy” ( okay okay okay maybe it is not super good for you but let’s just live in the delusion it is 🙂 )

I did make it a “bit” healthier by using whole wheat flour. You can make this recipe gluten – free by using gluten – free flour

As you will see almost everything you need in already in your pantry

This is the perfect recipe to have kids to help make — quick tip – If you have left over batter simply fill up some muffin tips and bake

Freeze the muffins and have them on hand for a quick breakfast or snack – I usually leave one out overnight to defrost 🙂

Another trick to shred the zucchini is using a cheese grater – I use one of the largest hole size — seriously it took about 4 minutes

If you make this recipe I would love to know what you think 🙂

This recipe is from my family to yours 🙂

Love you all!

This will make 2 Small Loafs

Ingredients

  • 3 Cups of Flour ( White, Wheat, or Gluten - Free)
  • 1 Teaspoon of Baking Powder
  • 1 Teaspoon of Salt
  • 1 teaspoon of Baking Soda
  • 1 Tablespoon of Vanilla
  • 4 Eggs
  • 1¼ Cup of Vegetable Oil
  • 2 cups of White Sugar
  • 2 Zucchini - Grated
  • 1 Cup of Walnuts - Chopped

Instructions

  1. Preheat oven to 325
  2. Grease 2 loaf pans - 8x4 works great ( I used a slightly larger in my recipe)
  3. Using a sifter - sift flour, salt, baking powder, baking soda, and cinnamon into a bowl ---- sifting makes the bread lighter 🙂
  4. In another bowl mix - oil, vanilla, eggs, and sugar
  5. Slowly add the flour mixture into the egg mixture --- once it is mixed add zucchini and walnuts
  6. Pour Batter into the loaf pans and bake for 1 hour
  7. Let it sit for 1 hour before taking out of the pan
  8. Enjoy!

Hi, Can’t wait to try this recipe. Can you list how much zucchini to use in cups please? Where I am, zucchini comes in various sizes and its hard to judge how much to use. Thanks!

  • Pam

I made this last night, it is amazing! I didn’t know how much cinnamon to use so I just sprinkled some in, and I used sunflower seeds and chia seeds instead of nuts – a generous handful of each. I used two medium-sized zucchini (about 9 inches long), grated with the large side of the cheese grater. The bread is moist and sweet with a crunchy crust. I made one large loaf and six muffins. Perfect; thanks for this great recipe!

  • cindy

Best zucchini made yesterday and it’s gone will have to make more.

  • Krystle

Has anyone tried this as muffins instead of bread?

  • Tammy

Used to have a recipe long ago similar to this one. Made this today just following the ingredients, having made a similar recipe, added everything and noticed no cinnamon in the ingredients… I just put in a couple of teaspoons, just guessing. How much was supposed to go in?? Next time, I’ll probably bump it up to a tablespoon. After referring back, it was referred to in the directions.

  • Amanda

    how much cinnamon?!

  • Kelly Erickson

This looks great, and I’m trying it right now. But I’m wondering how much cinnamon? It says to sift it with the flour, but isn’t in the ingredient list.

FAQs

Do you have to peel zucchini for bread? ›

There's no need to peel the zucchini or remove the seeds. You also shouldn't press or squeeze any of the excess moisture out of it. You want all that to go into the bread!

Should you squeeze water out of zucchini for bread? ›

But unless your zucchini is excessively juicy, squeezing the squash could be removing some of the moisture you really do want in the bread. It's up to you, though. Squeeze for lighter, drier bread. Leave it as is for denser, moister bread.

Why is my zucchini bread not moist? ›

The moisture that was in the zucchini was what you patted out. Freezing causes fruits and vegetables to lose moisture when thawed. Either use fresh grated zucchini or use all the liquid from the frozen.

How many zucchinis make 2 cups? ›

When sliced, 1 medium zucchini yielded about 1 to 1.25 cups and if grated, you end up with about 2/3 cup of tamped down zucchini. If you need 1 cup of cooked sliced zucchini, due to shrinkage while heated it will take about 3 medium zucchini, sliced, to hit the mark.

Do you grate or shred zucchini for bread? ›

Luckily, zucchini is extremely versatile and can be baked, grilled or sauteed, but I recommend grating it. Your grated zucchini melts into whatever it's cooked with, so it's great for sneaking into pasta or creamy risotto. It's also ideal for making baked goods like zucchini bread and other zucchini dessert recipes.

How do you shred zucchini for zucchini bread without a grater? ›

Chop the pieces into two-inch (five cm) squares and toss them into the food processor. Fill it up to the top. Pulse your food processor for 30 seconds or insert the squash through the shredding attachment. Check to see if your zucchini shreds are small enough.

Why do you soak zucchini in salt water? ›

Salt causes zucchini rounds to release excess water. This important extra step helps the zucchini to sauté rather than stew in its own juices.

Why does my zucchini bread fall apart when I cut it? ›

The most common reason for zucchini breadand other quick breads (and cakes) to collapse as they cool is the ingredients are too vigorously or quickly mixed, which incorporates lots of less stable air bubbles into the batter.

Should zucchini bread be cool before removing from pan? ›

Don't leave the loaf in the pan too long – Once you remove the bread from the oven, let it sit for 10 to15 minutes. But after that, it should be turned out onto a cooling rack to finish cooling. Otherwise, the edges can get a little too done in the still-hot pan.

Why does my zucchini bread taste bad? ›

When they are larger, zucchinis tend to contain more water, which leads to excess moisture in the batter. Additionally, larger zucchinis don't taste as good, with a more bitter flavor. They can also have larger seeds. These large seeds can throw off the texture of your zucchini bread.

Can you put undercooked zucchini bread back in the oven? ›

Fixing Undercooked Bread

It is pretty simple to salvage an undercooked bread and create a decent loaf. Heat the oven to 350 F, return the bread to the oven, and bake for another 10 to 20 minutes. This will work even if the loaf has cooled, which is similar to par-baking bread.

Why is my zucchini bread raw in the middle? ›

The main issue here is that the bread just isn't cooked through. Zucchini bread batter is thick, and loaf pans are narrow and tall, so there is a lot of batter in a relatively small pan. The center will be the last to cook through, so pay special attention to this area when checking your bread for doneness.

What is the fastest way to shred zucchini? ›

Hands down, the easiest and fastest way to shred a zucchini is with a box grater. In this step-by-step guide with photos, I'll teach you how to shred zucchini in four easy steps. I'll also give you plenty of healthy shredded zucchini recipes, plus show you how to freeze leftover shredded zucchini for later.

How much is 1 pound of zucchini? ›

One pound of zucchini equals about 4 cups grated zucchini; 2 cups of salted and squeezed zucchini; about 1 cup mashed zucchini; and 3 cups chunked zucchini.

How many zucchinis for 1.5 cups grated? ›

Exact amounts can vary based on squash sizes, but here's a general rule: One medium (6-ounce) zucchini will yield a generous 1 cup squeezed shredded zucchini, while a large (8-ounce) squash will give you about 1 1/2 cups.

Should zucchini be peeled before baking? ›

There's no need to peel zucchini. In fact, the skin is a big source of zucchini nutrition (the deep green color is a dead giveaway) so you definitely want to leave the skin on. How to cut zucchini: after giving the zucchini squash a good rinse under cold water, slice off the stem and discard it.

Can I eat zucchini without peeling? ›

You'll get the most health benefits if you eat the colorful skin, which holds the healthy carotenoids. Zucchini skin is soft, thin, and perfectly edible, so don't peel it off.

Why does my zucchini bread fall in the middle while baking? ›

The bread was sinking in because the leavening was wrong. It seems likely that the amounts of baking powder and baking soda were switched. Where you were using 1 tablespoon of baking soda and 1/2 teaspoon of baking powder, the actual measure should be 1 tablespoon baking powder and 1/2 teaspoon baking soda.

Do you grate zucchini with or without skin? ›

There is no need to peel zucchini before shredding it. In baked goods, the skin will become soft and add color and nutrients to your dish.
