We absolutely L-O-V-E this recipe! My family asks for them often! These are pretty versatile as an appetizer or as a side. They have a ton of flavor in them and they are thin and crispy, and a family favorite.

Baby potatoes - I use Golden Petite potatoes, but Baby Red potatoes will also work. Cook the potatoes until a fork pierces them easily. Keep in mind not to overcook the potatoes. Cook them just right. We typically see recipes for regular smashed potatoes with some garlic, salt, and few herbs. I wanted to give an Indian twist to these beauties. Potatoes are very versatile and used a lot in Indian cuisine.

Coriander Powder - Coriander powder, a staple of most Indian pantries, is widely used in Indian cooking. It is made by finely grinding dry roasted coriander seeds. Apart from adding a lot of flavor to the dishes, coriander seeds also have immune-boosting properties. Kashmiri Red Chilli Powder - What we refer to as chilli powder in Indian cuisine is just ground dried red chillies, unlike the chili powder available in the US, which is made up of many other spices, in addition to the chilli powder. There are different varieties of red chilli powder used in Indian cuisine, and Kashmiri red chilli powder is quite popular. It enhances the color of the dish without adding too much heat. A good substitute that I have personally used is Sweet Paprika powder, which a good substitute for Kashmiri Chilli Powder(if it is not available in your local stores). You can always adjust the spiciness of the dish by increasing or decreasing the red chilli powder. If you like it spicier, consider adding Cayenne Pepper or any other hotter Indian red chilli powder.

Amchur Powder -Amchur powder is dried raw mango powder and is used as a souring agent in a lot of North Indian dishes. This will be readily available in your local Indian grocery stores or online (affiliate link). Lime juice can be used as a substitute for Amchur powder(simply drizzle out the lime juice when the mashed potatoes are out of the oven).

Fennel Seeds -are called saunf in Hindi. My first introduction to them as a child was a mouth fresheners in restaurants. It is used in little quantities and mainly aids in digestion (web MD article about health benefits of Fennel seeds - opens in a new tab). I grind it to powder using a mortar & pestle.

Cumin Powder - Is the same as ground cumin seeds. Just like coriander powder, this spice is widely used in Indian cooking and is a staple of most Indian pantries. This is finely ground cumin seeds. Sugar - Sugar balances out all the flavors. The quantity of sugar I have used does not make it sweet, it just adds a hint of sweetness.

Note: I use the entire quantity of spice mix I have given in the recipe. If you prefer a milder taste, you can reduce the quantity of spice mix you use in the recipe. Save the rest of the spice in air tight container.

You will find the detailed instructions in the recipe card, but to give you a quick idea about how easy it is to make these chatpata & masaledaar potatoes, here is a quick run down of the steps:

  • Boil and cook the baby potatoes on the stove top.
  • Prepare the spice mix .
  • Prepare the oven and baking tray.
  • Smash the baby potatoes.
  • Spice them up!
  • Finish the cooking in the oven. (if your baking tray does not hold all the of the potatoes in one go, do it in batches)

See... it does not take a lot of skill to get this right. That's the beauty of it.

can you make smashed potatoes without oven?

YES! I tried making this on the stovetop. Follow the step till 8 in the recipe given in the recipe card below. Then instead of baking the smashed potatoes in the oven do the following steps to prepare on the stove-top:

  • Heat a large skillet or griddle with oil.
  • Place the smashed potatoes gently with the spices side up on the skillet.
  • Cook the potatoes until brown
  • Gently flip them over and cook on a low temperature (in order not to burn the spices).

A couple of drawbacks in this (stove-top)style of cooking is that the end product is not as dainty as the oven-roasted ones. And you have to be extra gentle while handling the smashed potatoes, else, there is a chance that they break. In spite of these drawbacks, the smashed potatoes will still be delightful.

  • We love to binge on these potatoes on their own. They are good as a snack or an appetizer for your next party (*bye bye Covid).
  • They are the perfect side for Curd Rice or Yogurt rice (which is Indian-style rice mixed with yogurt and spices). The mild taste of Yogurt rice is a perfect pair for this chatpata, masaledaar Indian spiced smashed potatoes.
  • Do you like Pongal? It is a protein-rich dish from South India. To make Pongal, rice and Dal are cooked in a porridge-like style with a beautiful tadka (tempering) of mild spices. This dish is often served as breakfast and I have seen many of my Tamilian friends make it for Poojas (Hindu rituals). This pairs well with Pongal. P.S. We observe a a no-onion, no-garlic diet for Hindu rituals .

meal Prep Tips

It is an easy dish to prepare and the instructions are also pretty straightforward even for a novice cook. In terms of meal prep for Indian spiced smashed potatoes, I suggest:

  1. Par boil the potatoes, smash them with a spatula, and save them in the refrigerator. Drizzle oil, sprinkle the spice mix, and roast them in the oven.
  2. Measure our and make the spice mix ahead of time. Store the spice mix in a n air tight container.
  3. Freeze the boiled smashed potatoes in the freezer. Thaw and roast them in the oven when you are ready to serve.

leftovers? no problem.

You can store the leftovers in an air tight container in a refrigerator. Reheating in a microwave oven can make the smashed potatoes soggy. The oven is the best way to reheat. Preheat the oven to 350 Degrees Fahrenheit (180 Degrees Celsius). Place the refrigerated smashed potatoes on a baking tray and bake until warmed through. You can reheat them on the stove top at a low temperature.

  • I usually get approximately 20 baby potatoes in a 1 lb (680 gms) of golden petite potatoes which is what I have used in the recipe.
  • Serving size –According to me this should be a good recipe for about 4-5 people. Adjust the serving size to suit your dietary needs.
  • I use the entire spice mix that I have given in the recipe card. If you are looking for a milder version (in terms of both heat & flavors), reduce the quantity of the spice-mix used. You can store the rest of the spice mix in an airtight container.

  • Pyrex Glass Mixing Bowl Set (3-Piece Set, Nesting, Microwave and Dishwasher Safe)

Ingredients

  • 1 lb Baby potatoes 450 gms | 20 numbers
  • 1.5 tsp Coriander powder
  • 1 tsp Kashmiri red chilli powder; adjust to taste
  • 1 tsp Amchur Powder
  • 1 tsp Fennel Seeds; crushed to a powder
  • ¾ tsp Cumin Powder
  • ½ tsp Sugar
  • Salt to taste
  • Oil for drizzling

Instructions

  • Wash and scrub the potatoes under running water. Place then in a saucepan. Pour water until the potatoes are submerged. I leave about an inch of water above the potatoes.

  • Boil over medium-high heat until the potatoes are fork-tender (about 20-25 minutes. Note: Do not overcook the potatoes.

  • Drain the potatoes into cold water and let them cool down for a few minutes.

  • While the potatoes are cooling down, Let's prepare the spice mix - To a small bowl add all the spices - coriander powder, Kashmiri red chilli powder, fennel seeds powder, Cumin powder, and amchur powder. Add the sugar and salt. Mix well with a small spoon.

  • Once the potatoes are cool enough to handle, drain them from the water. Add half of the spice mix to the potatoes and toss to coat. Reserve the rest of the spice mix.

  • Prepare a baking sheet by either lining with a silicon sheet or parchment paper. Preheat the oven to 425 degrees Fahrenheit (220 Degree Celsius).

  • Arrange the potatoes on the baking tray with an inch of space between each. Using a flat spatula gently smash the potatoes. (thinner potatoes yield crispier results).

  • Drizzle oil over the smashed potatoes. Sprinkle the rest of the spice mix evenly on the smashed potatoes. (Note: I use the entire quantity of the spice mix for a 1 lb of baby potatoes. Adjust the quantity of the spice mix used to your taste. You can store any remaining spice mix in an airtight container for future use).

  • Bake at 425 degrees Fahrenheit (220 Degree Celsius) for about 25-30 minutes or until the potatoes are done and are nicely golden brown on the edges.

  • Serve hot garnished with finely chopped cilantro.
