This keto birthday cake is made with a cream cheese base and cooked in a mini waffle maker. It takes you under 5 minutes to make it! It’s super simple! Mini cakes are super popular in the keto community because of the portion size and the time it takes to whip it up.

How to Sweeten a Keto Birthday Cake?

There are a few different ways you can sweeten your keto birthday cake and still be within the keto guidelines. In this recipe we used Swerve but there are plenty of keto sugar substitutes you have to chose from. It all depends on your own taste buds.

Here are a few sweeteners we use:

  • Swerve
  • Pyure
  • Stevia
  • Xylitol (be careful if you have pets because it’s poisonous to dogs)
  • Monkfruit

  • Splenda (Splenda will not raise your blood sugar but it might disrupt the gut flora and for this reason, I use it sparingly)

Are there Keto-Friendly or Sugar Free Sprinkles for a Birthday Cake?

Now, before the keto police come at me. Let me just say that I add those sprinkles just for the photo effect. I wasn’t in the mood to make my own out of keto-friendly sweetener and water. It just wasn’t worth my time. Feel free to make this keto birthday cake as you see fit with or without the sprinkles as they are not keto-friendly.

What extracts Can You Use In a Keto Birthday Cake?

So, there’s a trick to this recipe in making taste like an actual cake. You need a special flavoring called cake batter extract. When we are trying to be good on keto we have to get all kinds of creative and flavorings are the way to do it! I’ve not seen a cake batter flavoring in my local stores yet. It’s not one that is common like vanilla or peppermint. You probably have to order it online and have it delivered but it’s well worth it!

Ingredients for this Keto Birthday Cake Chaffle Recipe

Chaffle Cake Ingredients:

(makes mini four cakes)

  • 2 eggs
  • 1/4 cup almond flour
  • 1 teaspoon coconut flour
  • 2 tablespoons melted butter
  • 2 tablespoons cream cheese, room temp
  • 1 teaspoon cake batter extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 2 tablespoons swerve (confectioners sweetener or monkfruit)
  • 1/4 teaspoon Xanthan powder

Whipped Cream Vanilla Frosting Ingredients:

  • 1/2 cup heavy whipping cream
  • 2 tablespoons swerve (confectioners sweetener or monkfruit)
  • 1/2 teaspoon vanilla extract

Instructions for this Keto Birthday Cake Chaffle Recipe

  1. Preheat the mini waffle maker.
  2. In a medium-size blender, add all of the chaffle cake ingredients and blend it on high until it’s smooth and creamy. Allow the batter to sit for just a minute. It may seem a bit watery but it will work just fine.
  3. Add about 2 to 3 tablespoons of batter to your waffle maker and cook it for about 2 to 3 minutes until it’s golden brown.
  4. In a separate bowl, start making the whipped cream vanilla frosting.
  5. Add all of the ingredients and mix it with a hand mixer until the whipping cream is thick and forms soft peaks.
  6. Allow the keto birthday cake chaffles to cool completely before frosting your cake. If you frost it too soon, it will melt the frosting.
